(pie is on my to do list). My major critique is that the thermometer is very slow to react. If I've got the oven hot and open the door I'd expect the thermometer to drop pretty quickly, but it doesn't. It also doesn't react quickly to ordinary temperature change within the box. This puts quite a burden on the baker to act as the thermostat within pretty wide error bars.
